Scientists have eaten eggplants in three different ways, according to a Spanish study published in the Food Chemistry magazine, and found that frying eggplant in virgin olive oil would increase the level of its phenols. Phenols are antioxidants that can prevent chronic illness, such as cancer and decay of yellow spots. The cooked eggplant had fewer phenols, both in water and in water with olive oil.
