Salt essentially causes cells to take on more water, which then increases pressure on blood cells. In some cases, this leads to inflammation. Researchers from leading institutions such as Harvard and Yale suggest that salt is contributing to increasing cases of rheumatoid arthritis and other autoimmune diseases.
